Clean a Wood Cutting Board
When preparing food, it’s essential to maintain a clean and sanitary work area. This is even more important in commercial environments where there are typically more cooks in the kitchen and as result, much more activity. Cutting boards are one of the primary hotspots for cross-contamination, which occurs when juice from raw meats comes into contact with prepared foods or those which do not require cooking to a temperature which would kill any potential bacteria.

Three Steps to Sanitary

By nature, wooden cutting boards are porous, which unfortunately can provide natural hiding spots for bacteria. As such, these types of boards should always be cleaned immediately after each use following these simple steps:
  • Hand wash using soap and hot water.
  • Use paper towels or a fresh clean towel to pat the board dry.
  • To sanitize for a deeper clean, mix (1) teaspoon of bleach with (1) quart of water and pour it over your cutting board. Wait a few minutes and then rinse thoroughly with hot water.

Remember to dry off wet cutting boards promptly, as heat and moisture can lead to splitting of the wood and other problems. For this reason, you should also never clean wood cutting boards in dishwashers or otherwise submerge them for any duration.

Additionally, it’s crucial never to dry using hand towels which might be used for other purposes in the kitchen. This can lead to the very cross-contamination issues you’re seeking to avoid in the first place.
