While specific maintenance recommendations vary depending on the manufacturer and the unit, most companies agree that maintaining commercial ovens in good working condition can prevent the majority of costly repairs. 

Preventative Maintenance Tips

In addition to cleaning your commercial oven, certain preventative maintenance is necessary to keep it in optimal working condition. Here are several tips that will ensure maximum performance of your commercial oven.

  • Oven door maintenance: Maintaining a tight fitting oven door seal requires regular inspections. Also, you should avoid putting too much force on the door either by swinging it open to hard or by hanging heavy objects on it because this loosens the hinges and the seal. The best method for checking the seal is to put paper between the door and the seal. If you can slide it out, the seal is too loose. The results are cooking and heating inefficiencies.

  • Calibrated thermostats: Over time, a thermostat loses calibration, resulting in temperature inconsistencies. For that reason, you should ensure proper calibration of your commercial oven thermostat every few months. You can easily perform this technique with the use of an internal oven thermometer.  Keep in mind that slamming your oven door an also knock your oven calibration out. Alway avoid slamming your commercial oven door. If you notice a difference in between temperatures, you recalibration of the oven controls is necessary.

  • Calibrated programs and buttons: Using preset programming settings frequently for cooking can cause the calibration to register improperly. You might notice that your food is not cooking as well as it used to with presets. At that point, you should consider recalibrating the settings.
