Your kitchen works best when all major appliances are in premium working order. Sometimes you can substitute one piece of equipment for another if the first one malfunctions, but when it comes to your commercial range, there is simply no substitute. Here’s how to clean and maintain your commercial range regularly both to maximize the life of the product and to ensure that restaurant service doesn’t suffer due to its malfunction.
Clean Up as You Go
Clean spills as soon as they occur or you’ll have to deal with foods and liquids that become baked into your range top. In the event that spills extinguish a gas range pilot light, both the burner heads and the pilot orifice will have to be cleaned.
Thoroughly Clean the Grates and Burners
Burners can be removed from your range for cleaning purposes, regardless of whether your range is gas or electric. Some grates, such as cast iron models, are easily cleanable with nothing more than a cloth. If additional cleaning is necessary, you may need to soak the grates in warm, soapy water.
Thoroughly Clean Under Grates and/or Burners
Removing grates for cleaning gives you a great opportunity to clean underneath them. If your range utilizes drip trays, wipe them down daily to ensure they stay easy to clean. Like grates, try soaking them in warm, soapy water if a simple wipe-down won’t suffice. If you’re using a gas range, simply wipe down the areas under the grates.
Empty Your Scrap Trays
Scrape off excess food waste after using a griddle and try to do so regularly throughout the day. This not only keeps your equipment clean, but helps avoid food contamination at the same time. At day’s end, heat the grill to about 175°F and wipe it down using a thick cloth.
Clean Inside the Oven
If an oven base is a part of your range, you’ll want to clean the oven monthly, at minimum. Use a standard oven cleaner for porcelain interiors and detergent and a soft cloth for metal ones.
Extend the Life of Your Commercial Range Through Regular Cleaning
If properly maintained and cleaned, your commercial range should last long into the future. For more about proper maintenance, contact CASCO (Commercial Appliance Service Company) at (707) 544-5200 or stay connected socially through Facebook or Google +.
